About this syrup
Maple Nouveau is 100% Canadian maple syrup, made from the first sap collected during the opening days of the harvest — kept separate from the rest of the season and boiled as one dedicated batch. Preserving that early sap on its own, rather than blending it with later runs, lets its character come through clearly: a clean, refined maple aroma and a delicate, nuanced sweetness that's a genuine expression of the forest at the very start of the season. Produced in limited quantities, it isn't simply another bottle of maple syrup — it's a snapshot of the season's first harvest, captured in a bottle.
