The Process
From tree to bottle, in three steps.
Tapped
Each tree is tapped by hand in late winter, when overnight freezes and daytime thaws start the sap running.
Boiled
Raw sap — over 97% water — is boiled down slowly over wood fire until it becomes syrup. It takes about 40 liters of sap to make 1 liter of syrup.
Bottled
Bottled within 48 hours of boiling, by hand, in small batches. No additives, no shortcuts.
